Kargadubu/Kadubu- A Ganesh chaturthi special

Today I bring to you a dish that is absolutely quintessential for Ganesh chathurti. Karida kadubu or Kargadubu is a mandatory dish that is made as an offering for Lord Ganesha.

These dumplings are more than just festive sweets; they are offerings of love and devotion. As families gather to welcome Lord Ganesha into their homes, kadubu finds its place among the traditional naivedyam (offerings) presented to the deity. The crunchy exterior, paired with a fragrant coconut fragrant filling, reflects a beautiful balance — just as the festival itself balances devotion with celebration.

The process of preparing the filling, shaping the dumplings, and frying them till they reach that perfect golden hue is often a family affair, passed down through generations. Every bite tells a story of tradition, care, and festivity.

This recipe is one of those hand me downs from my Grandmother and this recipe never fails me. Each time my kaddunus turn out just perfect. These kadubus have a very light pastry like, melt in your mouth consistency. Give this recipe a try and I am sure you will not have kadubus any other way

Kadubu/Kargadubu- A ganesh chaturthi special

Celebrate Ganesh Chaturthi with Kadubu – crispy fried dumplings stuffed with dried coconut & sugar, a traditional South Indian sweet offered to Lord Ganesha.

Ingredients
  

  • For the outer covering
  • 3 cups All purpose flour
  • 3 tbsp fine smolina, roasted
  • 1/4 tspn salt
  • 4 tbsp ghee, melted
  • For the filling
  • 1-1/2 cup Dried coconut or copra, grated
  • 1 cup Sugar
  • 2 tbsp Poppy seeds, Lightly toasted
  • 1/2 tspn Cardamom powder
  • Other ingredients
  • 2 tbsp Raw milk, to seal the kadubu
  • Oil to deep fry

Equipment

  • frying pan,
  • a slotted spoon
  • a blender
  • a gujiya mould

Method
 

  1. For the outer covering::
  2. In a large mixing bowl, mix the All purpose flour, roasted semolina and salt and mix.
  3. Add the hot, melted ghee and mix till well combined
  4. Add water gradually and mix well to form a stiff dough and keep aside.
  5. For the filling:
  6. Combine the, dried coconut, poppy seeds, sugar and cardamom powder in a blender jar and pulse till the ingredients are well combined.
  7. transfer the mixture to a large bowl and set aside.
  8. To proceed::
  9. Divide the dough mixture into lime sized balls and set aside.
  10. Take one portion of the dough and roll it into a circle of 3" in diameter.
  11. Place a table spoon of the stuffing mixture in the middle and brush the edges with raw milk.
  12. Carefully fold the circle to form a semi circle and Seal the edges in such  a way that the filling secured when frying. A gujiya mould can be used for this purpose.
  13. Repeat the process with the rest of the dough balls and the stuffing mixture.
  14. Heat oil in a wok and deep fry the kadubus three to four numbers at a time till golden brown in colorDrain on paper towels and ENJOY!!!
  15. Drain on paper towels and ENJOY!!!
