Carrot and peanut salad

ry this refreshing Carrot & Peanut Salad — a crunchy, vegan Indian-style slaw with roasted peanuts, lime, and curry leaf tempering. Quick, healthy, and full of flavor!

Ingredients
  

  • 3 medium sized carrots
  • 1/4 cup peanuts roasted and skin removed
  • 1 tbspn Freshly grated coconut
  • Salt to taste
  • 1 tspn Lime juice
  • 1-1/2 tbspn oil
  • 1/2 tspn mustard seeds
  • 1 sprig curry leaf
  • 1 pinch asafetida
  • 1 tbspn Coriander leaves to garnish

Method
 

  1. Combine the grated carrots, coconut and peanuts and mix well
  2. Add salt, lemon juice and mix well
  3. For the seasoning, Heat oil in a small pan and add the mustard seeds. Once they sputter, add the curry leaves and asafetida
  4. Add the prepared seasoning to the carrot mixture. Garnish with coriander leaves and serve immediately.
