- Add salt, lemon juice and mix well
- For the seasoning, Heat oil in a small pan and add the mustard seeds. Once they sputter, add the curry leaves and asafetida
- Add the prepared seasoning to the carrot mixture. Garnish with coriander leaves and serve immediately.
